Oven Bannock

Ingredients:

8 Cups Flour
6 Tbsp. Lard
1 Tsp. Salt
4 Tbsp. Baking Powder
1 Litre Water or Milk

Directions:

  1. Pre-heat oven to 400º.
  2. Put the flour, salt, and baking powder in a large bowl and mix well. Either blend solid lard into the flour mixture with your hands or a patry blender, or melt lard over medium heat and place aside.
  3. Push the flour int he bowl to the sides and form a hole in the middle to hold the water. Pour the water (and lard if melted) into the hole and using a large spoon, mix and form into a batter. Knead it just until it is formed and not sticky. Do not overwork the dough or it will become hard. Flatten onto a flat pan and bake on middle oven rack for 10 minutes, turn over and continue baking for 8 minutes or until golden brown.

Outside Bannock

Ingredients:

6 Cups Flour
2 Tsp Baking powder
1/2 Tsp. Salt
1/4 Cup Sugar
4 Tbsp. Lard

Directions:

  1. Start by making your fire so that you have have hot coals to cook over. Mix all ingredients together except the lard, melt the lard into a cast iron pan, put batter in fryin gpan and put the pan beside the fire or over a bed of coals. Keep turning until golden brown on both sides.
  2. If cooking batter on a stick, add lard to the flour mixture and blend well. Roll the batter onto a stick and cook over the fire until cooked through.
